Zuchinni

We have so many zucchini in our garden that our neighbors, family and friends are sick of it... I wish I knew how to preserve them and had more recipes that are easy and don't break the bank.

    I have a great ratatoulli recipe and zucchini lasagna recipe on my page.

    You can slice or grate and freeze them to put into soups and stews later.  I addd grated zucchini to my spaghetti sauce and lasagna sometimes.  Just beware that when you thaw then, let them sit in a strainer so the excess juices drain away, otherwise you can end up with a soupy mess.  Depending on the dish, that can be very bad. 

    Type zucchini into the search bar and throw caution to the wind.  There are tons of awesome recipes out there.

    My mom used to shred zucchini and freeze it in freezer bags (usually 2 cups to a bag). The frozen zucchini worked great in zucchini bread, frittatas, etc.

    Gwennita, I have a recipe posted under judyjellybean for Chocolate Zuchinni Cake. It is a little different in that it has nutmeg and cinnamon in it. It is also a from scratch cake and needs no icing as chocolate chips are added to the top just before putting in the oven.
