Grandpakip's Buttermilk Fried Chicken
A repeat of an earlier post. A few Mixers have asked for this recipe and said they couldn't locate it. For those folks and all you new family members, here it is again. Changed up a little from last time, but basically the same recipe. Crispy chicken to die for.

Most cultures have some version of potato cakes. Traditional Irish Boxty Potato Cakes use both fresh potatoes and leftover mashed potatoes and are pan fried. The grated potato may be strained to remove most of the starch and water but this is not necessary. Boxty, in a contemporary presentation is served wrapped around beef with squash and sauce. (like Beef Wellington).

Lee, I know what you mean about taking longer to heat as the oven gets older. Mine is the same way. I have the double oven, with the smaller on top and that one heats way faster than the bottom. I don't use the bottom much unless I'm cooking something large like roasts.

oh didn't notice convection. I use mine for making granola cereal or roasting nuts. I have a habit of just baking with heat, that I just don't get around to using convection. I use it on the lowest setting for nuts. I think it is around 170F
I have some cookie dough to bake, I will try using the convection oven and see what happens. The cookies are for me, so I am not worried about ruining then!
