Vegetable How to Prepare How to Cook Time
Greens Clean and wash thoroughly. Do not cut off tiny beets. Cook covered or uncovered in very small amount of boiling, salted water. Turn frequently with a fork. 15-25 min
Kohlrabi Wash; pare; cut in slices or cubes. Cook covered or uncovered in very small amount boiling, salted water. Stalks may be cooked 5 minutes before florets are added. 25-30 min
Leeks Cut off green tops to within 1 1/2 or 2 inches of white part. Wash. Cook covered or uncovered in very small amount boiling, salted water. 15-20 min
Lentils, dried Wash; soak in 4 times as much water as lentils. Allow 1/4 cup lentils for each serving. Cook covered in water used for soaking; add salt after 20 minutes of cooking. 2-3 hrs
Mushrooms Wash and clean with brush. Cut off ends of stems. If stems are tender, cook with caps. Cook covered in very small amount boiling, salted water. Fry floured mushrooms in small amount butter; cover after browning.

Okra Wash pods; cut off stem ends. Cook covered in very small amount boiling, salted water. Fry. 20-30 min
Onions Peel onions under water. Quarter or leave whole. Cook covered in very small amount boiling salted water or uncovered in boiling, salted water to cover. 30-40 min
Parsnips Wash; pare or scrape. Slice crosswise or lengthwise. Remove cores, if tough. Cook covered in very small amount boiling, salted water. 25-40- min
Peas - Green Shell and wash. Cook covered or uncovered in very small amount boiling, salted water. Stalks may be cooked 5 minutes before florets are added.

Peas - Black-eyed Shell and wash. Cook covered in very small amount boiling, salted water. 35-45 min
Peas - Split or dried Wash; soak in 4 times as much water as peas. Allow 1/4 cup peas for each serving. Cook covered in water used for soaking; add salt after 20 minutes of cooking. 2 hrs
Potatoes - Irish Wash and pare. Cook whole or in halves. Or wash and scrub thoroughly; cook with skins on. Cook covered or uncovered in very small amount boiling, salted water. Bake in oven (350-400 degrees). 30-40 min 1 hr
Potatoes - Sweet Wash and scrub thoroughly. Do not pare. Cut off woody portion. Cook same as Irish potatoes; removes skins after cooking. Bake in oven (350-375 degrees). 30-40 min 50 min
