Using Leftover Baked Chicken

chicken recipesWhen following your favorite baked chicken recipes, you're sure to have some leftovers when cooking for a group of people. What to do with all that leftover baked chicken? There are several tasty ways to use the rest. For small amounts, try chopping the chicken into cubes or strips and making a chicken salad.

 

Most people associate chicken salad with mayo, walnut, pickle relish and other traditional ingredients, but there are many variations on chicken salad. You can try a simple southwestern chicken salad using corn, cheddar jack cheese and salsa, or an Asian salad with chow mein noodles, mandarin oranges and a ginger soy dressing. For larger amounts of leftovers from your baked chicken recipes, try making chicken tacos or burritos. All you need is a bit of taco seasoning to sprinkle on the chicken before reheating, and the usual taco condiments are you're all set to make a completely different meal than your original baked chicken recipe.
