Baja-Style Fish Tacos

I have such a soft spot for fish tacos, and sometimes I simply crave them for dinner!  I think it is because they remind me of the years I lived in Los Angeles.  There’s something about that combination of corn tortillas, crispy fish, vegetable slaw and a spicy kick that takes me right back to dinner at sunset along the Pacific ocean.

This beer-battered fish version is one of my favorites.  I suggest using one bottle of Corona in the recipe and serving the rest of the six-pack with dinner!

With Cinco de Mayo fast approaching you will see a lot of recipes for guacamole or margaritas.  I wanted to share a recipe inspired by one of my favorite south of the border flavors – Mexican Hot Chocolate!  Highlighted by that intriguing flavor combination of rich chocolate and spicy cinnamon.

These Mexican Hot Chocolate Snickerdoodles have become one of my new favorite cookies!  They also freeze perfectly, so feel free to make a big batch and save some for later.   Although, mine never seem to last that long!

Mexican Stuffed Peppers

This recipe is a vegetarian version of stuffed peppers with a Mexican twist!

The filling is made of brown rice, vegetables and beans with a kick from chipotle peppers.  Should there be any leftover filling after you stuff the peppers,, it makes a great stuffing for enchiladas, burritos, or quesadillas.

My favorite part of the recipe is the crunchy pepita topping.  It’s made with chopped pumpkin seeds, cheese and (here’s the twist) Grape Nuts cereal!

Copycat Chipotle Barbacoa Salad

On days when I don’t want to cook, somehow Chipotle always calls my name.  I love ordering mine as a salad and I always get the barbacoa.
