Simple Roast Chicken With Herb Crust and Seasonal Vegetables

Roasting a chicken on a bed of seasonal vegetables is one of our favorite winter pastimes. There’s something so comforting about the routine of it. So, while we usually give you twists on classics, we thought we’d stick to the basics here. This is the best tender and juicy roast chicken and vegetables recipe we’ve had in awhile. With a bed of veggies being basted by the caramelizing juices of the roasting chicken, your home is going to smell unbelievable. What’s even better is this one-dish meal can be made simply during the week or dressed up for the weekend.

Feel free to experiment with this basic recipe. Our version does an herb oil/butter on the top of the chicken. But a dry rub can also work, just make sure the inside of the chicken is stuffed with something like citrus to keep it moist. You can even whip up a barbecue sauce and use that in place of the herbs. There’s a reason this meal idea is a classic, and we hope you love it as much as we do.
