Pizza is one of America’s favorite foods, and we admit we don’t mind enjoying the dish at least once a week. However, it can become a little heavy, and all the meaty toppings really make us feel bloated and heavy. One of our favorite types of pizza is one with a cracker thin crust. We just love the crispiness. Anyway, with Lent being in full swing, we thought we’d share one of our favorite pizza recipes that omitted the meat! It’s a hearty Italian recipe for vegetarians you’re sure to love.

No Comments | Written on February 13, 2015 at 9:09 am , by

Comfort food has a nasty reputation for being unhealthy. It doesn’t have to be that way, we say! Here’s a perfectly hearty winter soup recipe that’s low calorie, low sodium, and meatless. How’s that for a triple threat? We love to serve this with a crusty Caprese panini on the side when the weather gets Arctic. Even if you don’t like beets, we think this soup might change your mind, as their flavor is a sweet subtlety in the dish.

Caramelized 4-Cheese Potato Gratin

No Comments | Written on January 21, 2015 at 10:49 am , by

We love elegant recipes that look like they took hours to prepare. This caramelized four-cheese gratin makes a wonderful side dish for dinner parties, and you can mix up the base recipe however you please! We even love to use fresh turnips and parsnips in place of potatoes. Any melting cheeses work well here, and will yield one creamy and cheesy casserole.

This simple layered potato casserole makes a wonderful make-ahead side dish during the winter, because all you have to do when you get home is pop it in the oven. The inviting aromas of the melting cheeses and softened potatoes will fill your house, and you’ll relax into the evening.

Southwestern Pork and Vegetable Soup with Fresh Cilantro

No Comments | Written on January 9, 2015 at 10:18 am , by

There’s something about a warm and spicy soup recipe in the cold weather that we’ve been having lately. This Southwestern soup recipe uses some vegetables to add nutrition, pork to add heartiness, and a whole bunch of fresh cilantro to give it a fresh taste prior to serving. If you’re feeling a little indulgent, you can serve this no-fuss winter soup recipe with a dollop of sour cream. Don’t worry, we won’t tell anyone.

This soup is best garnished with a variety of Tex-Mex toppings. Our favorite accents for this easy and hearty recipe include: crushed tortilla chips, fresh Mexican cheese (Chihuahua or Monterrey Jack are two of our favorites), and some hot sauce. For a thicker version of this soup, you can puree a cup of soup with some tortilla chips and return to the rest of the soup while cooking.
