Ginger Banana Bread

After being out of town for a few days, it looks like my bananas have turned on me.  When I left they were gorgeously ripe and perfect for snacking, now they are overly soft and brown.  We all know what that means – banana bread time!  I searched the Better Recipes archives for a new recipe and this one from cherylptw373316 piqued my interest.  I am obsessed with ginger and this recipe uses it in two ways.  Grated fresh ginger is incorporated into the batter and crystallized ginger is part of the streusel topping. The result was so elegant and delicate it begged to be served on fine china with a spot of tea!

TWISTED GINGER BANANA STREUSEL BREAD (click here to view and print recipe)


  • 1 1/4 cups granulated sugar
  • 1/2 teaspoon finely grated fresh ginger
  • 1/2 cup butter, at room temperature
  • 2 large eggs, at room temperature
  • 1 1/2 cups very ripe mashed banana
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped pecans
  • Streusel:
  • 1/2 cup all-purpose flour
  • 1/4 cup ground dry rolled oats (oatmeal)
  • 3 tablespoons brown sugar
  • 3 tablespoons very cold or frozen butter
  • 1 tablespoon crushed or finely chopped crystallized ginger


Preheat oven to 350 degrees. Spray a 9×5-inch loaf pan with nonstick cooking spray and set aside. In a large bowl, thoroughly beat together the granulated sugar, grated ginger and butter. Add the eggs, bananas, buttermilk and vanilla, beating until smooth. Combine the flour, baking soda and salt. With a rubber spatula, fold in flour mixture and pecans until combined, then spoon batter into prepared pan. For the streusel, add the flour, ground oats, and brown sugar to a medium bowl. Cut in the butter until mixture resembles small peas, then stir in the crystallized ginger. Lightly pat the topping over the bread and bake for 1 1/4 hours, or until a toothpick inserted in center comes out clean. Cool bread for ten minutes in pan before removing to a cooling rack to cool completely.

Number of Servings: 1 loaf

Notes: Other nuts, such as walnuts or hazelnuts, may be substituted for the pecans.
