I can’t believe so many St. Patrick’s Days have come and gone, and this is the first time I am posting a classic Corned Beef and Cabbage recipe!   In traditional Irish fashion, nothing goes to waste in this recipe.  The beef and the cabbage are even boiled in the same water!

Best Quinoa Recipe Ever – Quinoa and Black Bean Burger Sliders

2 Comments | Written on March 7, 2013 at 5:00 am , by

Last week we took a bit of a detour with the weekly recipe contest and threw our readers a curveball – quinoa.  This “ancient grain” has suddenly become a trendy ingredient.   We received a wide variety of recipe submissions with creative ways to use quinoa, but one unique preparation stood out to our judges, sliders!

These meatless mini-burgers are made with black beans and, of course, quinoa.  They come with a kick because of a spicy mayo spread as well as a jalapeño and corn salsa.  Believe me, you will want to make these “Quinoa and Black Bean Burger Sliders” this weekend!

A Drink with George Clooney…

No Comments | Written on February 26, 2013 at 5:00 am , by

Let me tell you about the time I had a drink with George Clooney!  Well, kind of…

This Sunday I had the honor and privilege of covering the Academy Awards from backstage in the press room at the Dolby Theatre.  What a night!  My favorite part was seeing the winners, walking in with their Oscar in hand, simply glowing.  We are able to ask them a few questions before they are whisked back to their seats or off to an after party.

The show concluded with Best Picture to “Argo.”  This meant, in mere moments, Ben Affleck and George Clooney would soon be within arms reach of my seat in the front row of the press room.

This recipe for fresh guacamole is so good, it could win an Oscar!  Literally…

On Sunday when the Academy hand out their annual awards, I am most excited to see who wins the “Animated Short” category.  Sure, I’ll be excited to see Hugh Jackman looking dapper, and thrilled to find out who takes home Best Picture, but this little category is of particular interest to foodies this year!

Cheese Ball or Cheese Log for Entertaining

I think I know your first question…  ”Are those walnuts RED?”  Yes!

I came across them at my grocery store and was so intrigued, I just had to try a sample.  They are not dyed or genetically modified, rather created using natural methods of grafting Persian red-skinned walnuts onto larger and creamier English walnuts. Red walnuts are only red on the inside, the tree and the shells look just like your typical English Walnuts.

This recipe can be rolled into a cheese log or cheese ball, whichever you prefer!  I used the red walnuts, rolled them into a log and will call it my “Red Carpet Cheese Log” for an Oscar get-together this weekend.

Ultimate Game Day Chili – Bacon, Beef and Booze!

2 Comments | Written on February 1, 2013 at 5:00 am , by

A Super Bowl party just isn’t complete without a big bowl of chili.  When I first read this recipe (it was tucked away in an old Cuisine magazine from the ’80′s) I was intrigued, but it also sounded super weird.  There are a few really out there ingredients that I had never seen in a chili before.  It was either going to be amazing or awful.  I took my chances.  Before I reveal the wacky secret ingredients, you should know that this chili involves three vital aspects of game day fare:  Bacon, Beef and Booze!

Plus, on top of that, the recipe recommends that you refrigerate the chili for 2 to 3 days before serving to allow the flavors to blend.  If you want to enjoy this for the Super Bowl, you better get started today!  On the plus side, all your cooking will already be done by kick-off.  On the downside, you have to wait all weekend for a taste!
