Polenta is a great way to add a little bit of heartiness to any dish. It’s just basically a fancier and thicker version of grits! This recipe uses them as a vessel to deliver the biggest flavors with some of the simplest ingredients you could buy.

The pesto is loaded with flavor from the pine nuts and the basil; it’s just a classic combination that you really shouldn’t skip out on. Then comes the chickpeas. They are a nice protein alternative and the flavor on these are extraordinary. The taste is perfect and it won’t have you missing the meat, like most vegetarian meals.
