This healthy baked ziti with roasted tomatoes is fantastic, and makes a great summer pasta to serve to your guests. Plus, you can add whatever fresh herbs you’d like to the mix and enjoy. Top with a sprinkling of freshly grated Parmesan for even more flavor. This can be a great side dish to enjoy with some easy barbecued foods, but is also wonderful as a lighter main course.

This  recipe is great for kids, as they’ll love the pops of flavor that the tomatoes bring to the table. The freshness from the herbs is a great compliment to the other flavors in this recipe. If you’d like to make a vegetarian version of this classic Italian recipe, just salt and drain some eggplant and replace it with the chicken. You can mix this recipe up however you’d like, and it’ll come out just fantastic.
