Glorious Grilled Halloumi & Tabbouleh Salad

We’re always on the lookout for the next delicious side dish, and this grilled halloumi and tabbouleh salad is absolutely fantastic. The lightly grilled cheese served on top of the absolutely fantastic tabbouleh.   The lightness of the lemon juice and the herbs that are tossed in make this recipe taste like heaven. Try this simple side dish at your next barbecue and you’ll impress your guests!

This salad is just too perfect when paired with a seared piece of grilled meat or topped with a cedar-plank smoked filet of salmon. This is a much better option to boring rice pilaf, both in taste and in appearance. If you have some fresh herbs on-hand that aren’t in the recipe, feel free to toss them in. Don’t have lemons? Don’t worry, any of your favorite citruses will do! This recipe is fantastic for a light summer lunch recipe, and can be prepared in advance to allow the flavors to marinate just prior to serving.
