With Cinco de Mayo coming up in the next week or so, we thought we’d help you get things started with a brand new so-easy and so-delicious Mexican recipe. This quesadilla is different from the versions you might be used to which are just loaded to the brim with cheese and bland flavors. With the addition of eggplant, this perfect and spicy quesadilla is just great for your Tex-Mex parties and pairs beautifully with a whole fruit margarita.

We love to mix up these quesadillas. You can actually season and sear some extra-firm tofu and use it in place of the chicken if you’re on a meatless diet; it’s absolutely fantastic. This is just fantastic when dipped in some freshly prepared tomato salsa or dolloped with some Greek yogurt instead of sour cream. You’ll just love the flavors here.
