Breakfast is the most important meal of the day, and with Spring (allegedly) just around the corner, it’s time to start lightening things up a little bit. This lemon and thyme frittata combines two wonderful flavors, and the result is one absolutely delicious way to start the day! We love to top this with a fresh Cotija cheese and a dash of paprika just before serving, it’s absolutely beautiful!

This frittata makes a wonderful recipe to help take you from winter to spring, because you can modify the base recipe as needed. Personally, we like to add some bacon and ham to the recipe when the weather gets a little cold, and then lighten it up to the recipe we present when Spring actually decides to roll around.
