Comfort food has a nasty reputation for being unhealthy. It doesn’t have to be that way, we say! Here’s a perfectly hearty winter soup recipe that’s low calorie, low sodium, and meatless. How’s that for a triple threat? We love to serve this with a crusty Caprese panini on the side when the weather gets Arctic. Even if you don’t like beets, we think this soup might change your mind, as their flavor is a sweet subtlety in the dish.

This recipe is wonderful for a lazy afternoon spent at home, because it’s relatively simple to prepare. Also, feel free to make some substitutions for what you have on hand. Diced canned tomatoes, canned beets, and any other type of pasta will work well in this recipe. If you don’t happen to have pasta on hand, feel free to whip up some homemade garlic croutons and use them as an accent to the soup, it’ll be just as good!
