Comforting Chicken, Barley, and Carrot Soup

This is THE soup for this awfully cold weather. With barley, chicken, carrot, and a flavorful broth in the mix, it’s a delicious and hearty way to get your vitamins and minerals during these months. This recipe is a perfect way to use a rotisserie chicken, and this is a great replacement for the boring old chicken noodle soup when you’re sick.

Feel free to substitute things like quinoa or noodles in place of the barley, the soup will still be delicious! Make a vegetarian version by omitting the chicken altogether and subbing in vegetable broth instead of the chicken broth.

We even like to serve this soup in a crusty bread bowl to make it a little bit more upscale for when we entertain. Garnish with just a hint of parsley, a wedge of lime, and you’re set. Another great idea for a variant on this soup is to add some canned diced tomatoes and whatever seasonal vegetables you have on hand. Experiment and have fun with this basic barley soup recipe!
