Our Favorite French Lemon Macaron Recipe

Well, it’s pretty much a given that we’re going to be baking almost every other evening in the winter. Something about the blustery weather that much of the country is about to face makes staying inside and cooking so much fun. These lemon macarons are one of our newest concoctions, and they put the seasonal citrus to good use. With such a light flavor and such a surprisingly simple preparation method, you’re going to be hooked.

These bite-sized favorites pair wonderfully with a lemon tea. Plus, this is one of the best cookies to freeze for later, because you can let them thaw and fill them just before serving. They retain their light and airy texture beautifully.

If you would prefer more of a contrast instead of an accent for the filling, use strawberry preserves in place of the lemon curd. It also adds a beautiful pop of color to the finished product. You can even dust with powdered sugar to add a little bit more elegance, if desired. We are absolutely in love with this cookie recipe, and think you will be too!
