Southwestern Pork and Vegetable Soup with Fresh Cilantro

There’s something about a warm and spicy soup recipe in the cold weather that we’ve been having lately. This Southwestern soup recipe uses some vegetables to add nutrition, pork to add heartiness, and a whole bunch of fresh cilantro to give it a fresh taste prior to serving. If you’re feeling a little indulgent, you can serve this no-fuss winter soup recipe with a dollop of sour cream. Don’t worry, we won’t tell anyone.

This soup is best garnished with a variety of Tex-Mex toppings. Our favorite accents for this easy and hearty recipe include: crushed tortilla chips, fresh Mexican cheese (Chihuahua or Monterrey Jack are two of our favorites), and some hot sauce. For a thicker version of this soup, you can puree a cup of soup with some tortilla chips and return to the rest of the soup while cooking.
