Light Cheesecake with Sugared Cranberries

If you want to have your pie (and eat it too!) this holiday season, why not opt for a lighter version of one of your indulgent favorites.

This “Light Cheesecake with Sugared Cranberries” replaces half of the cream cheese in a typical cheesecake and swaps in non-fat Greek yogurt.

You won’t find any sugar in this pie – just a quarter cup of honey as sweetener.  (Of course, there are the sugared cranberries on top, but those are more for garnish!)  Also, the crust of this dessert is made with fiber-rich Grape-Nuts cereal with a little bit of cranberry juice concentrate for sweetness and a dash of nutmeg for flair.

This dessert is best if made the night before and allowed to set in the refrigerator overnight before serving.
