This gluten-free and vegetarian side dish is a great go-to dish for the holiday season.  Everyone will love this “Roasted Butternut Squash Salad” and it is appropriate for a variety of dietary restrictions.  You can even make it vegan by eliminating the feta cheese.

This dish is built around roasted butternut squash that is tossed with a variety of Mediterranean herbs and spices.  There’s cumin, paprika, red pepper flakes, turmeric and dried mint.  The squash is combined with lentils (I used red lentils, but you can feel free to use your favorite), topped with feta cheese and garnished with a bit of fresh mint.
