Truffles are one of the easiest no-bake desserts to make.  I like to use a combination of crushed vanilla wafer cookies and ground almonds.  Then there is a bit of melted chocolate and pumpkin puree.  For the “boozy” part, you can use just about any liqueur you have on hand.  I have used Kahlua in the past, but this time I tried a honey liqueur and it was fabulous.  I think they would also be great with rum!

Whip up a batch of these “Boozy Pumpkin Truffles” today and enjoy them on Halloween night!
