Oktoberfest Beer and Cheese Pretzel Dip

The word “Oktoberfest” conjures up some of my favorite aromas and flavors of the season.  A warm, salted pretzel right out of the oven, rich cheeses and hearty beers.

To prepare this cheese dip, you start with a roux of butter and flour, then slowly add the beer, little by little, stirring constantly to whisk out any lumps.  Once all the beer is incorporated, add a bit of mustard along with grated cheddar cheese. Once the cheese melts, it is ready for pretzel dipping.  For presentation, feel free to garnish the top with a sprinkling of paprika.
