Pumpkin Spice Cupcakes

These adorable cupcakes look like a pumpkin from the outside, and taste like pumpkin on the inside!  They are so moist and delicious, no one will know you made them with a mix.

The cupcakes are prepared with a box of yellow cake mix, but with the addition of pumpkin puree.  I also added pumpkin pie spice to give the cupcakes even more fall flavor.

They are topped off with a cream cheese frosting that has been dyed a festive hue of orange.  Then, I used some of my favorite candies to make the cupcakes look like a pumpkin.  Simply unroll 1-inch pieces from a licorice spiral.  This will become the “stalk” of the pumpkin.  Green spearmint leaf candies are added to look like leaves attached to the stalk.  I have found these candies can be a bit thick, so I sliced each on in half so they fit better on top of the cupcake.

This recipe also works well if you prefer to make bite-sized mini-cupcakes!  For this version, I just used a bit of green decorating gel to make the leaves.  The licorice still works for the stalk, just cut smaller pieces.
