Gluten-Free Pumpkin Pancakes

Do you ever wake up in the morning with a pancake craving, but don’t want to make a whole big batch?  This recipe is great because it makes a stack of three small pancakes, perfect for one person.

Also, this recipe just happens to be gluten-free!

All you have to do is combine almond meal, pumpkin puree and an egg.  That’s it!  The pancakes aren’t too sweet, so they are perfect with a hearty drizzle of pure maple syrup.

A slight adjustment to this recipe will also make it Paleo.  Swap out the butter for coconut oil or ghee and it is a fun fall breakfast for anyone following the requirements for a Paleo diet.
