Roasted Carrot Hummus Vegetable Sandwiches

This veggie-packed sandwich just might be my new favorite lunch.  Not only is it colorful and healthy, but these pita pockets are easy to eat on-the-go!

The inspiration for this recipe came from a few different sources.  I recently signed up for a 6-month CSA subscription from Chef’s Garden through Farmer Jones Farm.  They offer specialty, heirloom vegetables delivered right to your door.  (I read that this Ohio farm even provides produce to some of the Michelin-starred restaurants in Chicago!)

The box is packed fresh and shipped overnight  – each one is literally overflowing with inspiration.  Those carrots were calling my name when another inspiration struck.

A few months back, this recipe for Roasted Carrot Hummus with Hand-Cut Pita Chips won our monthly blogger recipe contest.  I loved this idea of incorporating roasted carrots into a classic hummus preparation.  I gave the concept a few tweaks of my own by adding harissa spice blend for kick and dimension.

The result is outstanding as a dip with pita bread, but I wanted to use more items from the box to make a pocket-style sandwich.  With the Roasted Carrot Hummus spread on the inside, I stuffed the pita with green and red-leaf lettuce as well as halved heirloom cherry tomatoes.
