The authentic flavors in this recipe come from a combination of soy sauce, sesame oil and a dash of shaoxing wine, a traditional Chinese wine fermented from rice.  If you have trouble finding shaoxing wine, there are a few substitutes you can try.  Japanese sake is also a rice wine with a slightly different flavor.  You could also use dry sherry or even gin!
