Italian Butter Bean Soup

Sometimes I like to make a few batches of different soups and then portion them in the freezer for easy meals later.  This unbelievably easy 4-ingredient recipe not only comes together quickly, but it reheats from the freezer like a dream!

Start with vegetable stock and two cans of butter beans (also known as lima beans) and bring to a boil.   Then mix in sun fired tomato paste and some prepared pesto.   That’s it!  I like to use an immersion blender and puree the beans into the soup – leaving some of the beans intact for texture.

Serve with Italian breadsticks or grissini and garnish with a flourish of basil chiffonade.
