Creamy Curried Cauliflower Soup

Plus, blended vegetable soups are a great way to increase your daily veggie intake.  I love having this soup for lunch with a piece of warm crusty bread, or a smaller bowl as a starter to an evening meal.

Making this soup is a snap.  All you have to do is simmer cauliflower florets in milk until they are tender.  Then add curry powder and season with salt and pepper.  Blend the soup until it is creamy and you are done!

I like to garnish with Italian flat leaf parsley for color and finish it off with a few twists of freshly ground black pepper.
