Creamy Tomato Soup

You don’t have to wait until the colder months to enjoy soup – it’s a fantastic lunch or light dinner any time of year.

I could have soup just about any day of the week – a trait I share with my grandma, who is turning 93 years old today!  This blog post is dedicated to her.  I think this recipe is right up her alley!

There are a few secrets behind this rich and creamy soup.  You would think that it is overflowing with heavy cream…think again!  The richness actually comes from evaporated skimmed milk.  A smart swap.

I also love the bit of white wine in the soup.  As you wait for it to reduce, the entire kitchen begins to smell like a high-end restaurant.  Plus, if the bottle is already open, why not have a glass with your meal!

In this recipe I used Galerie Naissance, a bright Sauvignon Blanc from Napa Valley.  I found the natural acidity and mineral notes balanced the rich creaminess of the soup.
