Marinated Summer Squash

This “Marinated Summer Squash” is a beautiful cold appetizer presentation that is perfect for late summer entertaining.  Yellow and green squash are still in season, so now is the ideal time to make this dish.  I love how subtle flavors of garlic and sage are infused into the squash.

Best part is, everything can (and should) be made the day before, so you can sit back and enjoy a glass of wine with your guests!

I used the Pompeian OliveExtra Mediterranean Blend in this recipe.  It is a blend of canola, extra virgin olive oil and grapeseed oil.  I found it was the perfect combination of flavor and high smoke point for the preparation.

This is a wonderful appetizer to serve before a main course of grilled fish.  Finish off the meal with some fresh berries and whipped cream and you have a summer feast!
