Grilled Halloumi and Fennel Salad

At this point in the summer, you have probably grilled just about everything.   But have you tried grilling cheese?

Halloumi is a firm cheese with a high melting point, so it can be fried or grilled.  In this recipe, grilled halloumi is combined with grilled fennel to create an impressive appetizer salad.

Start by combining sliced halloumi, sliced fennel, fresh oregano, lemon zest, and olive oil.   Allow the marinade to chill for at least 2 hours to allow the flavors to combine.

Then, grill the slices of halloumi and fennel, reserving the marinade.  Pile the grilled fennel on a plate and top with the grilled halloumi.  Drizzle with the reserved marinade and garnish with a few fennel fronds and lemon wedges.
