I have always been a fan of chicken salad for its versatility.  You can always go the healthy route and make this a high protein lunch over a bed of lettuce.  Of course, there’s always the option to serve it as a sandwich, nestled inside a flaky, buttery croissant.

Anytime I have leftover chicken or turkey, this recipe comes to mind.  It’s great with shredded pieces picked off of a rotisserie chicken.  You can also use cubed, cooked chicken or turkey that was part of a baked or grilled preparation.

The chutney brings in a sweet element, while the curry adds spice.  The real secret in this particular recipe is the lime zest and juice.  The tartness plays well with the richness of the mayonnaise for a perfectly balanced sandwich experience.
