There are several reasons I love to cook “en papillote.”  It is a healthy preparation method that effortlessly steams protein and vegetables in one easy packet.  The presentation is beautiful and quite dramatic when you slice open the parchment paper envelope table side.  Plus, cleanup is a snap!

This recipe incorporates my absolute favorite white fish – halibut.  The fillet sits on a bed of colorful vegetables including carrots, snow peas and tomatoes.  It is all flavored with fresh herbs and a splash of white wine.
