I love the technique of transforming cauliflower into “couscous.”  It completely revolutionizes the texture of the vegetable into an entirely new experience.

The signature flavor combination in this recipe is harissa.  Harissa is a North African spice blend traditionally made with hot chilies, garlic, cumin and coriander.   This vibrant seasoning can be used as a rub on meats or added to couscous.
