The secret ingredient in this adaptation of Mexican “Crema?”  Cashews!  All you have to do is soak cashews in water overnight, then blend with a bit of vinegar and salt.  The result is rich, creamy and super satisfying.  You’ll never miss the dairy!

The tacos can be filled with any combination of your favorite beans and grilled vegetables.  I love vegan refried black beans over corn tortillas topped with grilled portabello mushrooms, zucchini, yellow squash and red peppers.  How will you fill your tacos?
