To continue with our “rainbow” theme from yesterday, wait until you try these Rainbow Whoopie Pies!  These could also be a fun and whimsical addition to a St. Patrick’s Day spread.

Start by making the batter for the whoopie pie cookies.  There is a dash of coconut extract and the zest of one lime.  Buttermilk keeps the cookies moist and pliable for that perfect cake-like whoopie pie texture.

The top halves of the whoopie pies are topped with the rainbow colored Fruity Pebbles cereal.

The creamy and fluffy filling continues the colorful rainbow theme with ground Fruity Pebbles cereal.  Once the sandwiches are assembled, I recommend storing them in the refrigerator.  They will keep up to 1 week.
