St. Patrick’s Day Rainbow Fruit Skewers

St. Patrick’s Day can easily turn a bit over indulgent.  With the soda bread, the corned beef, and, of course, let’s not forget all that beer!

If you are looking for lighter fare to serve on St. Patrick’s Day, these “Rainbow Fruit Skewers” fit the bill.  They are a fun and whimsical way to celebrate the holiday.

An array of colorful fruits are threaded on wooden skewers and then artfully fanned out and presented like a rainbow.  For a little extra fun, you can even include a “Pot o’ Gold” at the end of the rainbow, filled with chocolate gold coins.

Here are the fruits I choose to represent each color of the rainbow:

Red – Strawberries

Orange – Cantelope

Yellow – Pineapple

Green – Honeydew

Blue – Blueberries

Purple – Red Grapes

    This one may actually be a way to get the grandchildren to eat a healthy dessert. What little one doesn’t like a rainbow?
