Copycat Chipotle Barbacoa Salad

On days when I don’t want to cook, somehow Chipotle always calls my name.  I love ordering mine as a salad and I always get the barbacoa.

One thing that makes Chipotle so great is that the ingredients are fresh and simple.   Exactly why I thought I just might be able to recreate it at home!

The main challenge was to recreate the tender shredded beef barbacoa.  I figured this was a job for the Crock Pot!

A round center cut roast fit the bill and then I made a sauce featuring (surprise) chipotle peppers.  It cooked for hours in the slow cooker and then was perfectly tender and ready to shred.

At this point, you can make it your own, just like in the restaurant.  You can use the beef in a taco, or fill up a burrito.  I like mine as a salad so I built it with all my favorite ingredients!

I started with a bed of shredded romaine lettuce and topped it with black beans.  Next there is a layer of spicy salsa and a hearty helping of the shredded barbacoa.  A dash of cheese and dollop sour cream and I’m good to go!
