Curious about this Paleo diet everyone is talking about?

The premise is simple, if the cavemen didn’t eat it, you shouldn’t either.  That means avoiding refined sugar, dairy, legumes and grains.  The focus instead is on meat, fish, poultry, fruits and vegetables.  Good news?  If you need to follow a gluten-free diet, any Paleo recipe is right up your alley.

This recipe for Hot Italian Meatballs was adapted from “The 163 Best Paleo Slow Cooker Recipes” cookbook by Judith Finlayson.

It was my first attempt at a Paleo recipe and, I have to say, it was really enjoyable!  Maybe I need to give this caveman thing a try?  (Just kidding gentlemen, I’m not into being clubbed over the head…)

The meatballs are a combination of ground beef, almond flour, herbs and spices.  These are browned on the stove top then heated through in the slow cooker in a spicy tomato sauce.  The Paleo meatballs and sauce can be enjoyed on their own, or served over grilled eggplant or over zucchini noodles.
