I love giving edible gifts this time of year.  Of course it is fun to make homemade cookies, fudge and candies, but sometimes it is nice to also offer a healthy gift for the holidays!  This recipe for “Marinated Baby Carrots” in a jar is just as easy and fun to make, and can be a welcome alternative to sweet treats.  Carrots are a nutrition powerhouse, providing over 15 essential vitamins and minerals along with phytonutrients and fiber that are important for good health.

What makes this recipe so easy is that you can use a 1 pound bag of baby carrots that are already cut and peeled.   My favorite ones come from Grimmway Farms.  Baby carrots are full-grown, young premium carrots that are cut, peeled and packaged to make eating carrots easy, portable and enjoyable.  I like that they are an easy shortcut for this recipe!

After steaming the baby carrots, you simply layer them in a clean canning jar with a few bay leaves.  Then you prepare a simple pickling liquid and pour it over the carrots.   The marinated carrots are then kept in the refrigerator for at least 2 days or up to 2-3 weeks.  Wrap it up in a bow, and you have a healthy homemade gift that everyone will love and appreciate!
