I love the cheeses our winner uses in this recipe – a combination of fontina, ricotta and Parmesan. Fontina cheese is great because it melts like a dream. Ricotta adds a delightfully creamy texture and and the Parmesan creates a beautiful browned and bubbly crust on the top.
