Best Quick and Easy Recipe Ever – Speedy African Peanut Chicken

What makes this meal so easy, is that it is all baked in the oven at the same time on one sheet pan.

On one side of the pan, you place chicken thighs that have been seasoned with salt and pepper.  The rest of the pan is filled with a single layer of frozen sweet potato fries.

While the chicken and fries are in the oven, you whip together a simple African-inspired sauce to spoon over the chicken.  All you have to do is combine peanut butter, mango chutney and diced tomatoes with green chiles.

After 20 minutes in the oven, you spoon this sauce over the chicken and then put it back in the oven for about 15 minutes longer.  The chicken is fully cooked and the sweet potato fries are perfectly crisp and ready to enjoy at the same time!

The peanut butter, chutney, diced tomato sauce is a creative combination of flavorful ingredients.  It has a little spicy kick to it that is balanced with the subtle sweetness of the sweet potato fries.   The next time you are looking to change things up a bit at mealtime and experiment with a new flavor combination, I highly suggest you give this “Speedy African Peanut Chicken” recipe a try!
