Whole Wheat Pumpkin Bran Muffins

Looking for a seasonal recipe to enjoy this Columbus Day weekend?  These pumpkin muffins not only taste great, they are packed with healthy, high fiber ingredients!

Pumpkin puree keeps these muffins nice and moist, while whole wheat flour and wheat bran make them a high fiber breakfast treat.  Raisins are inside the batter, and pumpkin seeds (or pepitas) are sprinkled on top.

These muffins have a subtle sweetness since there is only a small amount of brown sugar in the batter along with molasses and honey.

I recommend generously greasing your muffin tins or using paper liners for this recipe as the batter can be a bit sticky.
