Best Peanut Butter Recipe Ever – Peanut Streusel Pumpkin Pound Cake

There were countless sweet and savory entries in the contest this week and our judges selected a winner that needs to find a permanent home in your recipe box.   Take a look at “Peanut Streusel Pumpkin Pound Cake!”

I found this winning recipe from “p.a.harmon” so intriguing because of the unique flavor combination.  It is a pumpkin pound cake (complete with ginger, nutmeg and cinnamon) but then there is a this genius peanut butter twist!  There is an entire can of pumpkin puree in the batter in addition to half a cup of peanut butter.  I wondered if the pumpkin would overpower the peanut butter flavor, but that wasn’t the case at all – it was simply a match made in heaven!

Then there’s the Peanut Streusel…

You will soon wonder why everything doesn’t come with a peanut streusel!  This topping is made with sugar, flour, chopped peanuts.  At this point a recipe would usually call for the dry ingredients to be incorporated into a crumble with a bit of butter.  However, in this recipe it is half butter and half peanut butter!   It was a bit sticky at first, but then it all came together beautifully!

It is the aroma of peanut butter heaven while this pound cake is baking in the oven.  It slices like a dream and can be enjoyed as a dessert or even for breakfast with your morning coffee!  I loved that the streusel topping wasn’t skimpy and I could savor each and every peanut buttery bite!
