This is it!  The sixth and final fruit and veggie smoothie in our “sip the rainbow” series.  Here is a recap…

Red:  Garden Fresh Strawberry Smoothie

Orange:  Peaches and Cream Smoothie

Yellow:  Skinny Pina Colada Smoothie

Green:  Peanut Butter Banana Skinny Green Smoothie

Blue:  Blueberry-Lemon Cucumber Smoothie

Finally…Purple!  

This purple-hued drink is most certainly a “Superfood Smoothie.”  It is filled with anti-oxidants, omega fatty acids, and a surprise veggie!

So many healthy smoothies nowadays incorporate some sort of leafy green into the blend.  I’ve tried spinach and kale, and they were both great.  That’s when I started browsing around the produce section for other ideas.  I stumbled upon a beautiful head of purple radicchio I thought, why not?!

I blended it with blackberries (raspberries also taste great) as well as some pomegranate juice.  Chia seeds are all the rage right now and they are a great addition to smoothies.   I threw in a tablespoon and the result was nothing short of magic!

Sure, you may be addicted to your “green drinks” but just wait until you try this purple Superfood Smoothie!  After one sip I think you will agree.  Purple is the new Green!

Superfood Smoothie

1 cup Radicchio leaves

3/4 cup Pomegranate juice

1/2 cup Blackberries

1 tablespoon Chia seeds

1 cup ice

Place all ingredients in blender and blend until smooth.
