Best Cookie Ever – Italian Ravioli Cookies

The winning recipe in our “Best Cookie Ever” contest takes an Italian classic and turns it on it’s head.  This is a dessert ravioli!

I think there might be a trend developing here.  This recipe follows in the footsteps of last years $1,000,000 Pillsbury Bake-Off Grand Prize winner, Pumpkin Ravioli with Salted Caramel Whipped Cream.  If you love ravioli for dinner, why not enjoy it for dessert too!

Lemon cookie dough is rolled out, cut into squares, and filled with a fig and hazelnut jam.  Just as you would with traditional ravioli, the edges are then crimped to seal in the heavenly filling.  Finally, the cookies are baked and dusted with cinnamon.

Instead of cookies and milk, this “grown up” treat pairs cookies and wine for an elegant indulgence.  Christianna says, “This cookie is the perfect balance of sweet, tart and nutty. The fig preserves and lemon add a brightness to the earthy, hazelnut dough. Try this with a glass of semi-dry white wine.”
