Kale Caesar Salad with Greek Yogurt Dressing

Why not combine them both into one super trendy, super food salad?

If you love the tangy zing of a classic Caesar Salad, but not the added fat and calories from the heavy dressing, then this recipe is for you!

In this version, kale is used in place of the romaine lettuce.  Then, the creamy Caesar dressing is made with non-fat Greek yogurt instead of mayonnaise.  It is a smart swap and you will never miss the added calories and fat!  I like to top it all off with shaved Parmesan cheese and a handful of croutons.

You could use store bought croutons, but making your own is a snap.  I like to use ciabatta bread and slice it into small cubes.  Toss with some olive oil and coarse salt to coat, then bake in a 375 degree oven until bread is dry and crispy.  Packaged croutons are fine, but homemade ones are better!

Kale Caesar Salad with Greek Yogurt Dressing

Yogurt Dressing:

1/3 cup Greek yogurt

1 clove garlic, minced

2 Tablespoons lemon juice

2 teaspoons Worcestershire sauce

2 teaspoons Dijon mustard

2 Tablespoons extra virgin olive oil

2 Tablespoons grated fresh Parmesan cheese

Freshly ground black pepper, to taste

Salad:

1 bunch kale, washed, dried, and sliced into thin pieces

Homemade croutons using ciabatta bread* or packaged croutons

Shaved or shredded fresh Parmesan

For Dressing: In a mixing bowl, stir together yogurt, garlic, lemon juice, Worcestershire sauce, and Dijon.  Gradually whisk in olive oil until combined.  Stir in grated Parmesan and freshly ground black pepper, to taste.  Set aside.

For Salad:  Place prepared kale in salad bowl.  Drizzle on salad dressing and toss gently to coat leaves.  Toss in croutons.  Garnish salad with shaved or shredded fresh Parmesan and serve.

*Note:  To make your own croutons, slice some ciabatta bread into small cubes.  Toss with some olive oil and coarse salt to coat and bake in a 375 degree oven until bread is dry and crispy. Let cool.  Packaged croutons are fine, but homemade ones are better!
