Limoncello Bundt Cake

If you love lemon as much as I do, this recipe is right up your alley. There’s a lemon cake mix, lemon pudding mix, freshly squeezed lemon juice, grated lemon zest, and, of course, limoncello! Whew!
Another reason to love this recipe? It freezes like a dream. You can bake the cake, wrap it up and freeze whole for a party later. Or wrap and freeze leftover individual slices. This also helps with portion control if you have a sweet tooth! Pre-portion appropriate-sized slices and defrost when you crave a treat.
Limoncello Bundt Cake
1 box (18.75 ounces) lemon cake mix
1 box (3.25 ounces) instant lemon pudding mix
4 large eggs
1/2 cup vegetable oil
1/2 cup lemon juice
1/2 cup limoncello
zest of 1 lemon
1 cup pecans, chopped
Glaze:
1/2 cup (1 stick) unsalted butter
1 cup sugar
1/2 cup limoncello
Preheat oven to 350 degrees F. In a large mixing bowl, combine cake mix, pudding mix, eggs, oil, lemon juice, Limoncello, lemon rind and pecans. Mix for 3 minutes. Pour into a greased and floured bundt cake pan. Bake for 45-55 minutes. When cake just comes out of the oven, make glaze. Melt butter and add sugar. Bring to a full boil until sugar is melted. Remove from heat and add Limoncello. Poke holes all over cake using a skewer or fork. Pour glaze slowly over hot cake. Cool completely in pan.

Lemonchello is a lemon infused liqueor found at most liquor stores. Fabulous!

Limoncello is an Italian lemon liqueur that can be found at well-stocked grocery stores and most liquor stores. It is lemony, sweet, and delicious! You can also make your own out of lemons, sugar and vodka, but you will have to be patient while the flavors develop.
What is the exact measure, in making lemoncello?

I like to put a little in a tiny glass and sip on it. I make a lemonmcello bread puddig that is outstanding, the resturaunt we go to gave out the receipe. The best place to store lemoncello is in the freezer.

I love to take and put lemoncello in a small glass that you would serve sherry in and serve it cold and just sip on it. The best way to store it is in the freezer.My husband and I go to a resturaunt that serves lemoncello bread pudding, they gave out the receipe, and it is wonderful
Can I make this cake in a regular square or round cake pan ?
I make limoncello several times a year. It takes months to make, and is not one of those – make it and drink it, it is a long process but worth it!
I made this cake except I made cream cheese frosting with a little limoncello in it instead of the glaze. It was delicious and would be delicious either way. My guests liked it so much, they took extra home.
Dear Blanche, You would need 1, 9″ greased and floured square pan ,bake 40 to 45 minutes, or two round 8″ pans that the bottoms have been greased and floured,(use no oil) only shortening or butter.
Bake in a pre-heated oven at 350 degrees for
28 to 30 minutes. We bought our bottle Liquore di Limoni,SAPORI DI CAPRI several years ago, needless to say we finished it off, but the box is decorative on the pot shelf of my kitchen and the frosted bottle holds dish soap to compliment kitchen colors. The Liqueur is delicious, I’ve had homemade… it’s not so good, so spend the money you’ve saved on not buying the Bundt pan, buy the delicous and tasty liqueur,
you won’t regret it.

Making Lemoncello takes 90 days, the first 45 are just the zest of thick skinned lemons and the volka, then a simple syrup is added for another 45 days. You can get the complete set of directions on the web. Delicious and fun to make yourself. When you put it into the freezer, oh so wonderful.
I’ve made homemade lemoncello twice and it’s my favorite liqueur. I’ve made many desserts, as well as consuming it with ice, but this recipe sounds yummy. Frozen lemonchello in a frozen lemon is also incredible. Enjoy.
Lemoncello is best served partially frozen. Put bottle in freezer for a few hours before serving. Also add to drawn butter for delicious dipping for lobster.
A teaspoon of lemon extract would work just as well with this cake . I use to make a cake like this minus the lemoncello , lemon juice , and pecans and I used the lemon extract in it. The cake was really moist.

Homemade limoncello makes a great Christmas gift in pretty glass bottles. I make several dozen bottles every year.Start the process in September and by early December you’re all set. It is most authentically made with grain alcohol rather than vodka. Can also be made with oranges also.

This is a great cake. Easy, nice presentation, and great flavor. I make my own limoncello, just because I like to try different recipes. Turned out pretty good, although I’m not much of a drinker. It is more of a appertiff, but can be used in citrus-type drinks also.
The smell when the cake is baking, is wonderful.
