Best Rice Recipe Ever – Bacon Risotto

The winner of our “Best Rice Recipe Ever” contest uses Arborio rice….can you guess what it is? That’s right, risotto!! This is no ordinary risotto, it’s Bacon Risotto.
This extraordinary dish comes to us from Lisa Speer, aka “pbcook.” Any recipe where you start by crisping bacon, is a winner in my book!

The key to any risotto dish is patience. I find it quite soothing and meditative to stand over the stove and add the wine and broth bit by bit as it is absorbed into the Italian rice. The recipe calls for 4 cups of chicken broth, but I find this can be tweaked and adjusted. Watch as the rice becomes creamy and delicious, and, of course, taste along the way. Once it is the perfect consistency for you, it’s time to serve!
We all know that “bacon makes everything better,” but I think the secret ingredient in this dish is the dry sherry. There is just something so alluring about a dash of sherry added right at the end of a recipe. I think it gives dishes that “restaurant-style” quality that is sure to impress!
Bacon Risotto (click here to print recipe)
1/2 lb Thick Cut Bacon, coarsely chopped
1 Large Shallot, minced
1/4 tsp Fine Sea Salt
1/8 tsp Freshly Ground Black Pepper
1/2 cup Dry White Wine
1 cup Arborio or Caraoroli Rice
4 cups Reduced Sodium Chicken Broth
1/4 cup Grated Parmigiano Reggiano Cheese, plus more for serving
2 Tbsp Dry Sherry
1/2 cup Frozen Baby Green Peas
Cook bacon in a large saucepan over medium heat until crisp, stirring occasionally. Transfer to paper towels to drain, leaving drippings in pan.
Add shallot, salt and pepper to drippings, then stir 2 minutes. Add rice and stir 4 minutes. Add wine and stir until liquid has evaporated. Add one ladle of broth. Cook, stirring constantly, until liquid is absorbed. Repeat with remaining broth, one ladle at a time. When rice is tender and all liquid is absorbed, add bacon, cheese and sherry. Taste and adjust seasonings if necessary. Remove from heat and gently stir in peas. Serve immediately with additional cheese.
