Red Carpet, Red Velvet Popcorn

Movies and snacks have always gone hand in hand.  We all love to munch on something delicious while watching a great flick!  (By the way, did you enter our “Popcorn Prize Package” blog giveaway this week?)

In honor of the Academy Awards this Sunday, I wanted to create a Red Carpet worthy popcorn.  Get ready for “Red Velvet, Red Carpet Popcorn!”

Keep reading for the recipe…

Start with a slice of red velvet cake or a red velvet cupcake.  You can save a slice from dessert, or swing by your favorite bakery and pick up one cupcake to go.  I don’t know about you, but my favorite part of a red velvet cupcake is the frosting.  For this popcorn, you will only need the “cake” part, so feel free to nibble away at the top!

Crumble the cake (I like slightly larger pieces) until you have 1 cup of red velvet cake crumbles.  These cake crumbles are then toasted in the oven so they can be tossed with the popcorn later.

A sweet, buttery topping coats the popcorn, and then you drizzle it all with melted white chocolate.   Finally, the toasted red velvet crumbs are added at the end so they can “stick” to the popcorn mixture.

Red Carpet Red Velvet Popcorn

1 cup red velvet cake crumbs

2 Tablespoons butter

2 teaspoons sugar

1/8 teaspoon salt

1 Tablespoon vanilla bean paste or vanilla extract

8 cups unsalted prepared popcorn

1/2 cup white chocolate chips

1 teaspoon vegetable oil

Preheat oven to 350 degrees F.  Spread cake crumbs on a baking sheet and bake for 8-10 minutes, until toasted.  Cool.  Melt butter, sugar and  salt in a small saucepan over medium heat.  Remove from heat and stir in vanilla.  Toss popcorn with butter mixture.  Microwave white chocolate chips and vegetable oil in 15-second intervals until melted; stir until smooth.  Drizzle over popcorn, toss until coated, then toss in cake crumbs.  (Recipe adapted from Woman’s World magazine)
